CAV: a unique dining experience in Providence

Let me tell you about this amazing spot that left me totally surprised during our short trip in Providence.
Gabriel — being the planning genius he is — found this cool gem called CAV. He was raving about how interesting the restaurant looked and how delicious the food seemed.
What amazed me the most about CAV was how different it felt compared to the other places we’ve dined at. We had a dinner reservation set for 6:30 (thanks, Gabriel!), and as we walked in, it was like stepping into wonderland. Now, here's where the magic starts to unfold.

about CAV
First things first, let's get the pronunciation down: CAHV.
CAV, short for Cocktails, Antiques, and Victuals, has been around since 1989. And trust me, it's not your average dining place. Nope, CAV is a whole experience in itself.
CAV isn't just a place to grab a bite – it's a piece of history itself. The bar is a historic mahogany bar that’s been standing tall since the 19th century! And guess what? This magnificent piece of nostalgia was once in Pete’s Tavern, the oldest tavern in New York! Yup, that's right — people have been sipping their drinks and sharing tales for over 150 years! 🥂
But not just the bar that’s unique, you’re surrounded by antiques (and some are also for sale too!) it’s like you’re dining in a museum!

the drinks
diverse cocktail menu
When we first flipped open the menu, my first impression was the cocktail menu was HUGE!
CAV is known for their martinis, so naturally Gabriel and I had to try out their martinis!
I ordered the lychee martini and Gabriel ordered the Prickly Pear. Loved the martinis!
TIP: start off with some appetizers and drinks, because patience is key. Trust me, those entrées are worth the wait.

the food
Mushroom Crostini appetizer
We went for the Mushroom Crostini. Crispy and crunchy bread with mushroom medley that's been soaking up sauces on the side. It’s goooood.
Oh, and here’s another little tip: we got ourselves a spot indoors at 6:30, and let me tell you, the restaurant was packed. Definitely make reservations if you plan to visit in the evening.
Poulet aux Poires
As for the main entrees, Gabriel tried their award-winning Poulet aux Poires – a dish that's as poetic as it is palatable. Succulent red pears, simmered to perfection in a ginger pear sauce, accompanied by chive dumplings.
Gabriel’s final verdict: The chicken? Juicy and dripping with flavor. Those red pears? Cinnamon-infused bites of pure succulence. His final verdict? A big thumbs-up. 👍🏼
Seared North Atlantic Salmon
I couldn't resist the Seared North Atlantic Salmon, dressed in a pomegranate beurre blanc. Instead of red potatoes, I swapped it for mashed potatoes — because, why not?
For me, I loved the surprise twist of lychee on the side and the sauce also had a sweet taste to it. The salmon was a bit dry, but still delicious. The flavor was definitely unexpected (in a good way) and left me craving for more after each bite.
